In the hilly middle of Sulawesi is "Toraja land", an area known for its special architecture, burial rituals and coffee. The name "Toraja" or "Toradja" refers to the indigenous people of the central highlands of Sulawesi (Celebes) in Indonesia. It means "men of the mountains" as opposed to the peoples of the lowlands.

Wet-Hull method

Most of the coffee plantations in southern Sulawesi are owned by small coffee farmers. The coffee is grown at an altitude of 1000 to 1200 meters in a humid and lush environment. The farmers mainly use organic fertilizer, made from tree bark and the pulp of the coffee cherries. The beans are processed according to the Wet Hull method, "Giling Basah" they say in Indonesia. With this Wet Hull method, the beans gain even more body and character. After picking, the Toradja Kalossi undergoes a special process. The coffee beans are first slightly dried, after which the silver-white skin is removed. What remains is a white, extremely swollen bean that then has to dry further on the ground or patio. This process produces an almost dark blue/green bean. Obtaining the typical earthy and fruity notes of the Toradja Kalossi requires a lot of attention.

Taste experience

The result of the special processing process is a full, spicy coffee with a deep, smoky first sip. Then follows a complex taste sensation of a fresh forest and earth combination, ending in the fullness of heavy, bitter chocolate with a spicy finish.
