Post-fermented tea is green tea that is allowed to ferment after the classic processing of green tea before it is dried. The absence of oxygen causes a special change in the composition of the tea leaf, which gives this tea its earthy, also maritime (fish-like) smell and taste.
Fermentation can be -raw- or -cooked-. You see Raw Pu Erh in China mainly in the so-called tea cakes that sometimes ripen for years. The cooked method is an accelerated fermentation and our Pu Erh tea is processed according to this method.
The tea has a characteristic earthy taste and is also known in the west because this tea is said to have a slimming effect. However, if properly brewed, it is a tea with many taste nuances that can be combined well with all kinds of dishes.
