White Tea - White Peony

This pure white tea from Fujian (China) gives a clear, light infusion with a fresh aroma and a soft, velvety taste. Ideal as a light afternoon tea.

White tea is made from buds and leaves picked in early spring. The whole leaves are allowed to dry quickly but are not further processed. This results in a coarse leaf tea with a refined taste. There is some light oxidation but the foliage is mostly green.

White tea (unlike other teas) is virtually unprocessed. With other teas, the flavor development starts during the production process by crushing and wilting of the tea leaf.

Brewing advice

Because the tea leaf of white tea is not wilted but only dried, you have to make more effort to get flavor out of it when making the tea. This can be done by a higher temperature or by a longer steeping time .

That is why we give 2 setting advice here. These are advices. Feel free to vary to determine your own preference.

Bái M ǔ d ā n = Pai Mu Tan = White Peony

There are sometimes different names for the same tea. And sometimes it's just the spelling that's different but means the same thing. (The spelling of Chinese names can change.)

Bái M ǔ d ā n is the pinyin spelling of what we used to call Pai Mu Tan. H ànyǔ pīnyīn (simplified Chinese) is the official Western letter spelling of the Chinese language.

Pai Mu Tan is the spelling according to the Wade-Giles system from the 19th century. This method has been used long into the 20th and is best known under the name Pai Mu Tan.

White Peony (white peony) is the translated English name for this tea.
