A tea merchant in Kyoto, whose supply of Bancha was in danger of spoiling, roasted his tea to dry it. What was created was one of the most popular Japanese teas today: Hojicha, with refined notes of wood and honey. This tea is also good to drink ice cold. This tea has a sweet taste due to roasting.
