Description

Classic oolong tea from the Chinese province of Zhejiang. Also called Iron Goddess Tea. This tea is slightly oxidized and has a slightly sweet taste and does not become bitter when cooled. So it can also be drunk well cold.

The original Tie Guan Yin tea is produced in Fujian. There are now also other plantations outside Fujian and outside China that make oolong in the Tie Guan Yin style.

There are several legends surrounding this tea. According to the legend of Wang, a tea farmer found a beautiful tea bush at the bottom of the Guanyin rock. He took the tea plant home and every spring he made tea from the leaves. He became so good at his craft that he was allowed to present his tea to the emperor who determined the name of the tea. Guanyin is the goddess of mercy and the balls of rolled tea make a metallic sound when you put the tea in the pot. "tie" is translated as iron. In English this tea is also known as Iron Goddess Tea.

During the production of tea, one can choose to let the wilted tea leaves oxidize - that is, react with the oxygen in the air. Then the tea leaf turns brown in color and we speak of black tea. Unoxidized tea is green tea. Oolong is slightly oxidized tea. Sometimes the tea is slightly oxidized and oolong looks like green tea and sometimes it is almost brown/black in color and oolong looks more like black tea (which is completely oxidized).

Cold Brew Ice Tea

Tie Guan Yin can also be reused for iced tea. The easiest way to do this is as a Cold Brew: put the leaves in a jug or bottle and add cold water. Let the tea steep in the refrigerator. You can continue to top up with water until the leaves no longer give off any flavour.
