Classic Jade Oolong tea

Oolong tea from Taiwan is famous for its high quality. Dong Ding Oolong is a classic green oolong tea, also called "Jade" Oolong because of its color. The name "Dong Ding" translates as "frozen mountain top " and is the name of the mountain where this tea is grown.

The tea has a clear amber color in the cup and has floral aromas reminiscent of peach blossom.

This quality tea is produced only in the Nantou region of Taiwan. The picked tea (3-4 leaves are picked from the bush each time) is briefly oxidized (15-30%), which preserves the green colour. The leaf is rolled by hand. Light and fresh flavour.

12 grams/litre 2-3 minutes 80-90°C

Chinese brewing advice

With a Gaiwan: 5 grams on 110ml. Use hot water, just off the boil, about 95°C. That may also be less hot, but then the tea smells less flowery / floral.

- Wash the tea first: so pour it on and drain it immediately.

- Then you pour again and you can repeat that 3 to 6 times.

- Allow the tea to draw briefly each time. Start with about 20 seconds and let the tea steep a little longer with the 2nd and later brews.

Icetea

This tea is more than suitable for Cold Brew (refrigerator) and Ambient Brew (room temperature). You can let the tea steep longer or shorter. But for a great result you can start with an hour. You can easily reuse the leaves: just until the tea no longer gives off any flavour. Usually after about 4-5 times. Every time the tea tastes just a little different!
