Description
The beautiful, flat, pointed, emerald green needles give a soft taste and a subtle scent. Gyokuro means "dear dew". This Japan Gyokuro is grown organically, which is still a specialty in Japan. Japanese green tea is generally savory (umami) in taste and the aroma is often vegetal - green like grass, spinach etc. This is in contrast to Chinese tea which is often sweeter.
Gyokuro tea is shaded with a mat of bamboo leaves for part of its cultivation. This happens about 2 weeks before harvest. The plant will then grow more slowly and produce more chlorophyll. That makes the taste more intense and also sweeter. The brewed Gyokuro tea has a beautiful bright green color.
Brewing advice Japanese method
Fill the bottom of a Kyusu, which is a small Japanese teapot, with tea leaves. Fill the teapot 2/3 with water at 60 degrees. Let the tea steep for 30 seconds and drain through a sieve. By emptying the teapot in dashes, you prevent the spout from becoming clogged.
For a 2nd and 3rd infusion, repeat this process 2 times, but with water of 80 degrees (10 seconds pulling) and 100 degrees (30 seconds). Certainly the 3rd cast has a bitter taste. Vary with a shorter brewing time or a lower temperature to make it more comfortable for yourself.
